Cuvée I Pinot Noir
Impressions:
Color is a bright, textbook ruby red. An interesting blend which I would not have put together on paper, but when it was in the glass, it approached perfection! Amazing aromatics ranging from crushed bay leaves to blackberries on the vine to mimeograph paper; all so comforting and memorable. You immediately feel at home and yet young, or at least younger! With a little time, a hint of hot cast iron from an oxygen limited fermentation tingle the nose. (Leaving the wine in the barrel without any racking is almost always a better idea than moving it to try and change something.) Entry is subtle, akin to drinking a better Chambolle during its infancy. Flavors show black plum, slate, hoisin sauce and kumquat. Finish is smooth and linear, even at this stage in the wines life, showing more freshly turned fertile earth and Chanterelle ladened forest floor. Impressive wine.
Composition:
Saffron Fields 943+ 777+ Wind Hill 115 press
1/2 Yates Conwill Wadenswil + 1/2 Saffron Fields Pommard + 667

Saffron Fields 943 Heavy Lees
Wind Hill 115
